Our story
Twenty seats, one counter, and the hour of dusk.
Yugure is a small room built around a cedar counter on Orchard Lane. The cooks work in front of you, and most evenings the menu is settled only a few hours before the first seating.

01 — The counter
A room built around the counter.
Fourteen seats face the kitchen and two small tables sit by the window. From any seat you can watch the grill, the rice pot and the knife work.
We keep the room quiet and the lighting low, so the food and the conversation can take the lead.
02 — What we buy
Fish from the morning market.
Most of our fish arrives the same morning it is served. What comes in decides what goes on the board that night.
Vegetables come from a small group of growers in the Hudson Valley, and we change the menu when their harvest changes.

03 — How we cook
Charcoal, rice and a few good tools.
Skewers are cooked over binchotan charcoal, rice is made in small batches through the evening, and every plate is finished at the counter.
We would rather do a few things carefully than many things quickly.
Seasonal
The menu follows what is good this week, not what was printed last month.
Small
Twenty seats let us cook to order and remember how you like your sake.
Close
Nothing sits between you and the kitchen. Ask the cooks anything.
